Good Old-fashioned American Food???
February is a short, cold (for most of us except the lucky Sun-belters) month, a good month for thinking about hibernation (think Ground Hog) and good old-fashioned comfort food.
I suppose that's why I always seem to find myself reading up on traditional American food lore right about now, four or five weeks after the Holidays-- right on schedule, like my friend, the ground hog. This month we'll look at some “old” favorites: Much has been made of comfort food in recent years-- so much so that sometimes it almost seems like the latest in cutting edge cuisine, rather than the tried and true of blessed memory. The stereotype of comfort food is something soothingly bland and rich. As you will see, I beg to differ. My own definition of comfort food :

Dishes that are easily assembled and require no “exotic” ingredients and special skills. I define “exotic” as something unfamiliar to your own personal experience: my son's Vietnamese friends wouldn't find lemon grass or fish sauce the least bit exotic!

Savory dishes with balanced seasonings that don't make you sit up and take notice.

Dishes that make you feel that all's right with the world when you get up to leave the table. In other words-- healthy ingredients, carefully prepared. No greasy, empty calories need apply.

Recipes that you make often enough to have internalized them to make them your very own. That means they're your's to adjust and to tinker with depending on your mood and what you happen to have on hand, and are all the better for it.
